Beneath the Forest Is Another World
For more than a decade, working with Lagotto Romagnolo has taken me into the forests of the Pacific Northwest and introduced me to a world most people walk directly over.
A Truffle Dog’s Forest follows that world—from the extraordinary noses of truffle dogs to the native Oregon truffles hidden beneath the soil, and from seasonal wild foods and mushrooms to the kitchen, where those discoveries become something to share.
Part field guide, part food and foraging book, and part celebration of working beside a dog, it explores the landscapes, skills, stories and recipes that grow from paying closer attention to what is beneath our feet.
Lagotto Romagnolo are at the heart of the story, but this isn't a book only for Lagotto owners. It's for truffle hunters, foragers, dog people, cooks, mushroom hunters, and anyone curious about the hidden life of the Pacific Northwest forest.
Inside the book you'll find: practical truffle-dog training and field lessons; Oregon truffles and their habitats; the Lagotto Romagnolo and the breed's working heritage; seasonal mushrooms and wild foods; harvesting, handling and preserving; recipes inspired by what comes home from the forest; and stories about the dogs and people who make this unusual world a community.
