Truffo: Pine trees, rain, wet moss—and TWO kinds of truffles.
Vita: That’s right. It’s Christmas, and the forest is multitasking.
Winter Whites Are in Full Swing
Right now, Oregon Winter White Truffles are hitting their stride. This is prime season—the moment when aroma, maturity, and flavor all line up like perfectly wrapped presents.
Truffo: Savory, garlicky, nutty…
Vita: Don’t forget “makes humans very happy.”
Truffo: My favorite flavor.
Winter whites love cozy dishes: eggs, pasta, risotto, potatoes, and anything involving butter (which should honestly be its own food group). Add them at the end, let the warmth bloom the aroma, and try not to cry tears of joy.
And Oregon Black Truffles Are Just Getting Started
While winter whites are confidently strutting their stuff, Oregon Black Truffles are just beginning to emerge. Early season blacks are firm, earthy, and quietly complex—like they’re warming up before the big performance.
Vita: They’re subtle now.

As the season progresses, Oregon blacks deepen in aroma and character, making now the exciting start of what’s to come.
Christmas in the Forest
While humans are decking halls, the forest is doing what it does best—producing rare, seasonal treasures on its own schedule. Rain-soaked soil, cool temperatures, and healthy ecosystems make winter the most magical time of year underground.
